Melt the butter in a large pan over medium heat. Add the bread mix flour and stir for a few minutes to cook it well and remove any raw flour taste.

Gradually pour in the milk, stirring constantly, until you obtain a smooth, creamy béchamel with no lumps.

Add the cured ham and a pinch of salt if needed. Cook the mixture, stirring continuously, until it pulls away easily from the sides of the pan.

Transfer the mixture to a tray, cover it with cling film in direct contact, and let it cool. Then refrigerate for at least 4 hours.

Shape the croquettes using your hands or two spoons. Coat them in beaten egg and then in breadcrumbs.

Fry in plenty of hot olive oil until golden and crispy. Remove excess oil with paper towels and serve immediately.
