Start with the wrappers. Mix all dry ingredients in a bowl and gradually add hot water, stirring (start with a spoon or spatula, then finish kneading with your hands. The dough should feel like plasticine, not sticky). Set aside.

Cook all the filling ingredients in a pan (they should remain slightly raw as they will finish cooking with the gyozas). Let cool.

Take the reserved dough and shape it into small balls, then roll them out thinly with a rolling pin. Use a round cutter to shape them into gyoza wrappers.

Once all wrappers are ready, fill and fold into the traditional gyoza shape (3 pleats on each side). Marta has shared a tutorial in the Instagram post linked above.

When all are filled, cook in a pan with a little oil until the bottoms are golden. Add 240ml of broth with half a spoon of corn starch, cover, and let cook until the liquid evaporates (around 20 minutes).

Serve with the sauce and enjoy in good company.
